1/4 cup fresh arugula or spinach
2 tbsp hummus or whipped feta
1 tbsp pesto (ingredients for homemade below)
1 tbsp pickled red onions
Optional: sliced avocado or grilled chicken for added protein
For the pesto (if homemade):
1 cup fresh basil
1/4 cup walnuts
1 garlic clove
1/4 cup olive oil
2 tbsp nutritional yeast or grated parmesan
Salt & pepper to taste
Directions
Prepare the pesto:
Blend all pesto ingredients until smooth.
Adjust seasoning to taste.
Layer the sandwich:
On one slice of the lightly toasted bread, spread hummus or whipped feta.
Add roasted sweet potatoes, grilled veggies, and greens.
Drizzle pesto generously.
Top with pickled onions and optional avocado or protein.
Close with the second slice, press gently, and slice diagonally.
