How to Thaw and Use Frozen Blackcurrant Purée

To ensure the best flavor, texture, and food safety, follow these steps when thawing and handling your frozen fruit purée:

1. Defrost Slowly for Best Results

  • Keep the purée in its original sealed packaging while thawing.
  • Place it in the refrigerator at 35°F to 39°F (2°C to 4°C) for at least 24 hours before use.
  • Slow defrosting helps preserve texture, color, and natural flavor.

2. Easy Unmolding or Cutting

If you need to portion or unmold your purée while still partially frozen, try one of these quick methods:

  • Method A – Room Temperature Rest:

    • Remove the lid but leave the protective seal intact.
    • Let the tray sit at room temperature for 5 minutes before opening.
  • Method B – Lukewarm Water Technique:

    • Keep both the lid and protective seal on.
    • Run the tray under lukewarm water for at least 30 seconds.
    • Then remove the lid and protective seal for easy unmolding.

3. Storage After Thawing

  • Once thawed, store the purée in the refrigerator and consume within a few days.
  • Never refreeze a product that has already been defrosted.
  • Follow proper hygiene and HACCP safety practices during handling.

Great quality BUT...
...it comes in one whole block and should not be refrozen once thawed. The purée tastes great (we mix it with yogurt), but to get smaller portions, one must go through an exercise of partial thawing, removing whatever's thawed, and then putting the rest back in the freezer. I didn't have time for that so we're eating a lot of blackcurrant yogurt this week.
